Pecan, raw chocolate and cashew energy bombs


These rawsome little mouthfuls are perfect on-the-go snacks. Makes about 12. 

1.5 cups of nuts and seeds (I used pecans, sunflower seeds, almonds and pumpkin seeds)
2 tbsp coconut oil
1 tbsp nut butter (I used cashew)
1 tbsp cacao powder
4-6 medjool dates (depending how sweet your snacks to be)

Put all the nuts in a food processor and pulse until they’re finely ground. Add in the cacao and pulse briefly til mixed. Then add in the oil, nut butter and pitted dates. Pulse again until the ingredients are fully combined. Take heaped spoonfuls of the mixture and roll in your hands to make a ball shape. Then roll the ball in a coating of your choice (I used chopped pistachios but shredded coconut works well too). Repeat until you’ve used up all the mixture. Freeze or refrigerate.

I prefer mine straight from the freezer.
